Tuesday Recipe: Toffee Crunch Blondies

Even though I cook for myself and others regularly, I'm really more of a baker. Actually, I think my preference for baking is directly linked to my preference for one pot meals. I just like having everything together in one place. Blondies, in case you haven't heard, are brownies without the cocoa. With this recipe, you've got the cookie-cake vibe of a brownie, chocolate chips to satisfy your chocolate craving, and crunchy toffee bits that elevate the square from a more mundane chocolate chip cookie place. As you can imagine, this simple recipe is a big hit.

Ingredients:

1/2 cup softened butter
1 cup packed brown sugar
2 eggs
2 cups all-purpose flour
1 tsp baking powder
1/2 tsp baking soda
1/4 tsp salt
1 cup chocolate chips
1 pkg (200 g) Skor bits

Directions:

Preheat oven to 350 F.

Beat butter with brown sugar and eggs until well blended. Stir in flour, baking powder, baking soda and salt. Mix well.

Stir in chocolate chips and 1 cup of Skor bits. Spread into greased 13 x 9-inch pan. Bake for 23-28 minutes or until golden brown. Remove from oven and immediately sprinkle evenly with remaining Skor bits. Cool. Cut into bars. Makes about 36 bars.

Recipe notes:

  • Always use unsalted (sometimes called sweetened) butter when baking unless directed otherwise
  • To soften your butter quickly, leave it on a plate on the oven while it preheats
  • Use the foil or wax paper butter wrapper to grease your baking dish
  • If your toffee bits came in bulk or a different size package, you need about 1/4 cup to sprinkle on top
